Mascarpone & Raspberry Dessert Pizza

Serves 2

Ingredients

1 Tucker Fresh Selections pizza base

200g full cream mascarpone, cold

1 rounded tbsp honey, extra for drizzling

1-2 tbsp fresh lime juice

125g fresh raspberries

30g salted macadamia nuts, roughly chopped

30g Flake chocolate bar

 

Method

Preheat oven to 200 degrees celsius

Put the pizza base onto a pizza tray

Place in the oven on the middle shelf for 8 minutes to get a crispy base that will be strong enough to hold the ingredients well

Remove the heated base from oven & allow to cool for 5 minutes

Make the topping, in a small bowl mix the mascarpone with honey & 1 tbsp of lime juice

Add the rest of the lime ONLY if you like a tangier taste

Thickly coat the cooled base with the mascarpone topping

Place the raspberries & macadamia nuts evenly over the top

Sprinkle with Flake chocolate & drizzle with honey

Season with salt & pepper

Cut into slices & serve immediately
