Rue’s Tiramisu

We were lucky enough to have Rue from Masterchef visit our Kinross store and grab some ingredients for her latest creation: Tiramisu by Rue!

Base:
200g chocolate biscuits
100g melted butter

400ml Brewed coffee to dip your biscuits (room temp and add 2 tbs sugar and 1/2 cup coffee liqueur or skip)
300g finger biscuits (200g If you want only 2 layers) I think 3 layers would be nice

Cheesecake Mixture:
3 packets cream cheese
180g caster sugar
300ml thickened cream
100ml coffee liqueur or brewed coffee (adjust this to your taste)

1tbs powder gelatine
80mls water

Heat up in microwave and add into cheesecake mixture just before pouring over the dipped finger biscuits

Bournville cocoa powder to dust

Rue’s Top Tip: I used Easter eggs, hazelnuts, dark chocolate pearls and shaved chocolate to decorate.
