Serves 4.
Ingredients
4 heaped tbsp natural Greek yoghurt
2 tbsp lemon juice
120g baby cucumber, finely grated, then squeezed
4 cloves fresh garlic, finely grated
salt and pepper
500g lamb mince
50g brown onion, finely chopped
1 heaped tbsp fresh rosemary, finely chopped
1 heaped tsp onion powder
1 heaped tsp garlic powder
1 heaped tsp sumac powder
salt and pepper
225g haloumi cheese, sliced
4 fresh bread rolls
4 serves tomato relish
50g red onion, finely sliced
4 handfuls spinach and/or rocket leaves
Method
Make the tzatziki by mixing yoghurt, lemon juice, cucumber, ¼ of the garlic, salt and pepper in a medium bowl.
Cover and put in the fridge for later.
Make the lamb burgers by mixing the mince in a large bowl with the rest of the garlic, brown onion, rosemary, onion powder, garlic powder, sumac powder, salt and pepper.
Divide the mince into 4 serves and make 4 patties.
Heat a large frying pan and once hot add the patties, add oil only if necessary.
Fry until well cooked.
In another pan fry the haloumi until slightly golden.
Put the burgers together with relish on the bottom bun then the patty, haloumi, red onion and then rocket.
Spread the tzatziki on the top bun and place it on top of the burger.
