Choc Chunk Cookie Ice Cream Sandwich

Create these delicious Choc Chunk Cookie Ice Cream Sandwiches with us using Milka chocolate and Community Co Salted Caramel Ice Cream!

You can fill with any flavour ice cream you like, just make sure to eat them quickly before they melt!

Prep time 10 min. Cooking time 10 min. Makes 16 cookies / 8 ice cream sandwiches.

Ingredients

170g brown sugar

80g white sugar

120g salted butter, melted

1 large egg, room temperature

1 tsp pure vanilla extract

190g plain flour, sifted

½ tsp baking powder

100g Milka Milk Chocolate Bar, roughly chopped into small chunks

1 L Community Co Salted Caramel Ice cream

Method

Whisk both sugars with butter until combined.

Add the egg and vanilla extract then whisk again.

Use a wooden spoon to stir in the flour and baking powder until a dough comes together. Fold in the chocolate chunks.

Cover the bowl and refrigerate for 30 minutes.

Preheat the oven to 180C.

Scoop out 8 balls of ice cream into a muffin tray and put into freezer.

Line 2 large baking trays with baking paper.

Scoop out 16 balls of dough and place 8 on each tray

Bake for 10 minutes or until they become slightly golden, transfer them onto a wire rack to cool.

Once cooled, the cookies in the freezer 1 hour.

Line up 8 cookies upside down on a tray. Place the pre-scooped ice cream onto each cookie then put the top cookies on.

Push down a little so they hold together.

Put them on a tray and back in the freezer until fully frozen.
